Question from a Christian about the Passover Lamb…

Exodus 12 forbids the bones of the Passover Lamb to be broken, but I’m assuming that this prohibition does not cover cartilage. Is that correct? When you eat the Passover, do you separate the lamb into parts for everyone to eat?
