I wish there were more kosher restaurants that served authentic international foods

I’ve got one brother who cooks a lot, whose Chinese-American ger friend taught him a bunch of recipes from around Asia. I have another brother who doesn’t keep kosher, and loves to talk about all the great dishes they’ve had at such-and-such ramen place or this-and-that local Vietnamese eatery. (They also order takeout a lot, so I get to see and smell their meals, too). Between the two of them I’ve developed a craving for kosher Asian food (and I’m not talking about ordering Chinese). But it’s hard to find. I tried looking up kosher places in the vicinity that served pho soup, and I found one whole restaurant that closed in 2019. (Don’t even ask about buying kosher dashi outside of Japan).

It’s a small annoyance in the scheme of things, I know. First world problems and all that. But when it still bums me out a bit when I think about all the things I’d like to try that I probably won’t be able to.
