American- jewish melting pot

Why do so many american jews for example gravitate towards and feel very strongly about wearing mass-produced generic Stars of David to represent their Jewishness? why not other symbols that represent more specifically the strands of judaism their ancestors come from or practices from their unique origins? I’m thinking about things like ottoman kame’ot, litvak birch amulets, hungarian unicum, etc. As a hungarian jew (not orthodox, been in the states awhile), it often feels to me that much of the judaism practiced in the us is melting pot-like, for example in its ubiquitous use of Israeli pronounced Hebrew as opposed to the widely varying pronunciations of different Jewish cultures, love of “just Jewish” foods like potato kugel and gribenes without acknowledging that these foods are largely inseparable from the surrounding cultures of the regions they come from, etc. I’m not against the practice or enjoyment of any of these popular things, it’s just weird to me how little a lot of American Jews seem to know about the histories and practices of Jews in other countries outside of like pogroms and antisemitism and that’s why we’re in America type stuff.
