scenario: person observes shabbat and Jewish holidays

Person received offer letter with annual salary, disclosed he’s shabbat observant and now potential employer suggests hourly rate

company doesn’t have make up policy or working on weekends. there’s a fixed working hours. and, company is closed on all fed holidays

what options can he offer to the employer to keep the annual salary? obviously, he’ll be making less money with the hourly salary but maybe that’s the good price to pay?
