What are your favorite dishes to eat during Pesach? Even better, what comprises some of your favorite meals?

I made some good turkey meatballs with matzah meal this year, and have added quinoa to homemade K for P soups and salads. Of course there’s dairy matzah pizza and matzah nachos. What are yours?
