Why is stunning an animal before slaughter not allowed?

From my understanding the law of Kashrut in terms of slaughter is based off least amount of suffering and pain for the animal. In cows for example, stunning the cow with a bolt makes the cow unconscious when slaughtering, surely this is less painful for the animal? I have heard of some scientific jounal articles measuring the differences in pain of animals of religious slaughter vs stunned slaughter but am struggling to find much, sources appreciated.
