What does it mean that you have to have a unbroken matrilineal chain to be Jewish

I’ve read that even if you convert a Jewish woman’s kids are still Jewish

So if your Jewish from your mom’s side of the family or both sides how can the chain be broken?

Is this just talking about having a record of ancestry?

also since your tribe is from your fathers side what effect did that have on people with non Jewish fathers in the past and today ?
