Quick skirt steak question for y’all.

I recently bought skirt steak from a new place and it’s pretty dark. I emailed the company and they assured me the meat comes fresh and it’s dark because it gets the most salt when koshered because it’s an outside cut.

I know very little about meat cuts, does this make sense?
