Questions from a gentile

I am not personally Jewish but many of my close friends are and I have a couple questions about the faith.

First,I know the Torah is typically recited in a lyrical way so is there a specific way to sing different passages or is it more up to the individual?

Second,what word is more appropriate to call someone of the Jewish Faith, Jewish or Jew. I think Jewish might be more appropriate but I’ve heard both and would like to be aware of the correct word to use
