Questions about Haymanot and Ethiopian Judaism

I’ve been struggling to find good sources about haymanot and the specific differences from normative Judaism. From what I can tell the main (and large) difference is they don’t have the Talmud and thus their Halacha is radically different. Could someone point me to a book or article to read about this fascinating branch of Judaism?

Also, do most Ethiopian jews still practice this? Most interviews with religious Ethiopian Jews they appear to be normative Orthodox with a Sephardi nusach. How/why did this happen? Why the Sephardi nusach?
