Question about conversion from a Jew to Catholic to Jew again

Hello all!

So I’m in a weird situation and I can’t seem to find any concrete answers online so I figured I’d ask here! So I was raised in a dual religious household. My mom was Jewish and my dad was Catholic. We would go to Synagogue and Church interchangeably and celebrate many Catholic and Jewish holidays. It wasn’t until I was 12 when my mom stopped practicing Judaism and made a full conversion into Catholicism. As a result of this, we stopped doing everything Jewish related and strictly went to Catholic Mass and I was made to go to religious education. I was not a fan of this at all (still not) but I did it anyways to make my parents happy. I was confirmed in the Catholic Church but only to appease my parents, as I was non-religious at the time. I’m now in college, and I’ve made many Jewish friends and have been attending Chabad with them for the last few months and it’s really made me miss the sense of community and closeness to my heritage/relationship with the Lord. So I was wondering, in this instance, how could I go about converting? I can’t seem to find answers anywhere and the Rabbi is a very busy man so he has not been able to have a one-on-one with me yet.
