New to Beverly Hills but not Jewish

Hello! My boyfriend and I are new to the Beverly Hills, CA area. There is a very large Jewish population here, but we ourselves are not Jewish (we do not practice any religion). We’d love to appreciate our neighbors religion without appropriating it. For example, if greeted with Shabbat shalom, it it appropriate for us to respond Aleichem Shalom, even if we are atheists? Would it be seen offensive to give gifts around Hanukkah? Is there anything specifically we should take into consideration on certain days? I apologize if this posts seems naive – where we grew up, there are very few Jewish communities, and we do not want to seem like we are ignorant or disrespectful of their community. Thank you very much for your input.
