Lack of Kosher non-"American Chinese" restaurants

I am a Chinese food enthusiast who is a big fan of Hunan/Szechuan cuisine, mainly mapo tofu, cumin beef/lamb, and I’ve never seen such dishes on the menus of glatt kosher Chinese restaurants. I like to support kosher business/restaurants when I can, even tho I don’t observe Kashrut. Why do virtually no kosher Chinese places have anything spicy? Are there issues w/ the recipe inherent w/ these? Or are they just so niche?
