I work with a client who will be attending an inclusive Jewish Summer Camp (I will accompany him) and neither his family nor I are Jewish. I want to be respectful and pack daily lunches that are Kosher, so I know meat+dairy is a no, but my go-to is usually a ham and cheese sandwich since I’m kind of lazy when it comes to lunch prep in the mornings.
Does anyone have ideas for small lunches I can pack that don’t need any reheating or more than an ice pack to keep until lunch? A quick Google search I did pulled up some prep-heavy meals and I feel like peanutbutter and jelly will only get me so far into the summer. Thank you!
