Interfaith (but we don’t want to be)

I’m Jewish and my fiancee is not. She thought she was because she “converted” herself a long time ago and was not aware that only an orthodox conversion is accepted.
Now, we’re about to get married and I find out she’s not “officially” Jewish which means… neither will our children be and this is huge for us. We definitely did not plan to have non-Jewish children and it’s a huge, painful thorn jammed into our relationship now.
We’re not rich so, orthodox conversion is out of the question right now but we are not getting any younger and we are ready to have children as soon as possible.
Is there any way to have Jewish children if the mother is not Jewish? Can the children be converted at birth? We’re desperate to find options.

Thanks in advance for any advice.
