How Kosher is a vegetarian diet?

I’m secular/reform and have never followed kashrut outside of when meals are provided at religious services.

Most of the rules of kashrut I know about revolve around meat, shellfish, mixing meat and dairy, and preparing meat with separate cookware. Of course there are different laws around certain holidays, but on a normal day if I only eat a vegetarian diet what would make a vegetarian diet not kosher?

I’m basically wondering how often I’m ‘accidentally’ following kashrut.
