Do jewish people that have jews as parents consider themselves ethnically jewish or was that made up by racists???

I have jewish friends and want to be respectful to them, so I want to know if jewish people consider themselves ethnically jewish or if its a thing that was made up by antisemites. I don’t want to accidentally say something disrespectful, so I wanna know.
