Could butter aged meat be kosher?

Completely theoretical question here, I saw a guy aging meat by covering it with a thick layer of butter before leaving it for a long time. I was wondering if that would render the meat treif? Is the prohibition to only cook meat and dairy, but if you can wash the meat thoroughly such that there would be no trace left of butter on it, would it be ok? Or do we hold that the taste of butter has impregnated the meat, making it improper for kosher consumption?
