Books and Text Suggestions?

Gershom Scholem’s Kabbalah books reference Tannaim, Amoriam and Geonic Periods as 10-220 CE, 200-500 CE, 600-1100 CE.

Are there any good book recommendations for each of these periods and the work they did in Aggadah, Halakic texts, etc

Trying to expand in note-taking what these periods contributed to today’s Talmud and Mishnah.
