Ashkenazi or Sephardic practices?

I am very interested in Judaism and am thinking about converting to Judaism in the future (I am still educating myself on the subject so please bear with me) and considering that my family (atheist) is originally from Andalusia (fled the Civil War but still married Andalusians) I was wondering if I should convert to Ashkenazi or Sephardic practices? I am confused about it all kinda
