Ashkenazi Jewish practices (observant)

So in the past year I have been trying to find a religion that is right for me to practice, and my entire family has not been happy that I have been thinking about leaving Judeism. I was thinking that I would look more into my culture and practices of my heritage, but swiftly realized that everything that I learned in my reform California Hebrew education was a giant mixture of both Sephardic and Ashkenazic practices. So now I am wondering, if I were to follow all of my cultures practices to the T, what would it be like? Do any of you have any websites that you know of that I can check out? My family is Ashkenazi from the Ukraine and (now ex)Prussia. Thank you in advance 😊
