Any book recommendations for a spiritual agnostic who’s curious about learning/ sympathetic to converting to Judaism?

So I’m from a family of Irish Catholics, English Anglicans and Chinese Buddhist-Taoists, but have always been an agnostic-atheist. However, since my dad tried to proselytise me and everyone he knows since he’s become a fervent Christian, out of rebellion against coercion I started watching Rabbi Tovia Singer who critiques the flaws of Christianity. Next thing I know I’m beginning to feel really sympathetic to Jewish monotheism and theology. I’ve followed a strictly Kosher-Kashrut (+ vegan) diet for a while now and have tried to maintain/ live by the ethics of the Tanakh. I’m a scientifically-minded and progressive person who wants to learn about Judaism/ Jewish history and see any philosophical arguments for Judaism. Any book or media recommendations for open-minded inquirers?
